Peanut butter is my downfall in life and this biscuit is THE ONE!
Makes 22 (27g each)
This is what you need;
250g peanut butter (I use smooth but if you have crunchy, chuck it in, gives great texture)
110g unsalted butter
60g caster sugar
40g Muscovado
1 egg
300g self-raising flour
Start by preheating your oven to 180 degrees, gas mark 4.
Then in a bowl, whisk peanut butter, butter and sugar until fluffy. Add the egg and sift the flour and baking powder in and mix well. You should be now have a firm dough, weigh out 22 27g balls, roll them then take a fork and press down so you kind of flatten the biscuits out a bit.
Bake in the middle of the oven for 18 minutes until golden brown.
I know is hard to wait but let them cool for 20-30 minutes and then dunk them in your choice of beverage, easy!
